This menu moves through delicate, bright flavours into rich, indulgent courses — starting with a silky spanner crab soup lifted with egg, spring onion and aged vinegar, followed by an open wonton layered with spanner crab and kombu bacon XO. Crisp textures come through in the crab spring roll and signature crab xiao long bao.
The centre of the banquet showcases a Zhoushan-style crab salad with king crab, coriander, iceberg, red cabbage and ginger, before moving into a deeply savoury mud crab paired with mushroom XO and crispy egg noodles. A warm spring onion pancake rounds out the savoury courses, and the feast finishes with a five-spice doughnut — light, fragrant and just sweet enough.
